White Chocolate and Fresh Cranberry Cookies



1/2 cup dairy free butter

1 cup sugar

1 teaspoon vanilla

1 egg

1 1/2 cup flour

1/4 teaspoon baking soda

1/4 teaspoon salt

3/4?cup fresh cranberries quartered

1/2 cup dairy free white chocolate chips


In the bowl of a stand mixer combine butter and sugar and mix on medium until fluffy. Add in egg and vanilla and mix until combined.

Add all remaining ingredients and continue to mix, except the cranberries and dairy free white chocolate chips. Once all is throughly combined, add the remaining ingredients in and just fold over until mixed throughout.

Chill dough for 30 min. Preheat oven to 350° F and like a baking sheet with parchment.

Drop 1” balls on prepared sheet approximately 2” apart. Bake for 9-12 minutes until cookies are browned at the edges. Let cool on the pan for 5 minutes and then transfer to a wire rack to cool completely.
