3/4 c shortening 1 cup sugar 1/2 c unsweetened applesauce 2 tsp vanilla extract 2 3/4 ap flour 1 tsp baking powder 1/2 tsp salt
In a stand mixer combine all ingredients and mix with paddle attachment until combined. Dough will be slightly crumbly but will form a nice log when you shape it with your hands. Wrap dough in Saran Wrap and refrigerate for at least 30 min to overnight (preferred) This help prevent spreading.
Preheat your oven to 350. Line a baking sheet with parchment paper. If chilled for more than 30 minutes, let dough sit out at room temperature for approx 15 minutes before handling it.
Flour your rolling pin and your counter and roll out and cut as desired. Transfer to parchment lined baking sheet.
Bake for 13-16 minutes or until bottoms and edges start to turn golden brown. Let cool on baking sheet for 5 minutes. Transfer to wire rack to cool completely, and then decorate as desired!
