Chocolate Wafer Cookies
3/4 c dairy free butter at room temperature 1 c granulated sugar 1 large egg at room temperature 1 1/2 tsp vanilla 1 1/2 c all purpose flour 3/4 c unsweetened natural cocoa powder 1 tsp baking powder pinch of salt In a stand mixer fitted with a paddle attachment beat the butter with the sugar until it's light and fluffy. Beat in egg and vanilla. Scrape down the sides and bottom of bowl as needed. Whisk in baking powder and while mixing on a slow speed, slowly add dry ingredients into wet. Raise speed as necessary. Divide dough into two equal parts. Roll each portion out on parchment about 1/4" thick. Stack pieces with parchment in between onto a baking sheet and refrigerate for at least an hour. Preheat oven to 350 degrees. Cut out as desired then pop in the oven on a parchment lined baking sheet. Cook for 12-14 minutes. Remove from oven and let cool on the tray completely. Melt 12oz of dairy free chocolate chips in bowl. Dip cooled cookie in chocolate, and let excess drip off. Set back on parchment to harden. Decorate as desired.
