1/2 C dairy free butter
1/2 C granulated sugar plus more for rolling dough
1 egg
1 tsp vanilla extract
1 1/2 C ap flour
1/4 tsp baking soda
1/2 tsp salt
Preheat oven to 350° and lone a baking sheet with parchment paper.
In the bowl of a stand mixer, cream together the dairy free butter and the sugar. Mix until light and fluffy.
Add remaining ingredients and mix until a soft dough forms.
Scoop out about a 1 tbs size ball and roll in hands until smooth. Put in sugar and roll until complete covered and then set on baking sheet.
Place on baking sheet approximately 1 - 1 1/2" apart. Bake for 8-11 minutes until bottoms are lightly browned and cookies are puffed up.
Let sit in baking tray for 3 - 5 minutes then transfer to a cooling rack. Enjoy!!!
