Soft Vegan Almond Cookies


1 c ap flour

1 c almond flour

1/2 tsp baking powder

1/3 c maple syrup

3 tbs melted coconut oil

1/2 tsp salt

1 tsp almond extract

1/2 tsp vanilla extract

Almond slivers for topping


Preheat oven to 350 and line a baking sheet with parchment


Combine all dry ingredient in bowl of a stand mixer. Add melted coconut oil, maple syrup, and extracts. Mix until combined.


Scoop dough and roll into a 1" ball and then slightly press down on the top to make flat. Repair with hands large cracks on the side of cookies. Sprinkle almond slivers on top.


Bake for 14 minutes, until edges start to brown and tops appear dry.


Let cool on baking sheet for 10 minutes before transferring to wire rack to cool completely.
