1 ½ cups ap flour
1 tsp baking powder
1 tsp ground cinnamon
pinch of salt
½ c dairy free butter
⅓ c granulated sugar
⅓ c light brown sugar packed
1 egg
2 tsp vanilla extract
Topping:
1 c granulated sugar
2 tbs ground cinnamon
Preheat oven to 350° and line. Baking sheet with parchment.
In the bowl of a stand mixer, cream the dairy free butter and the sugars until they are light and fluffy. Once combined, add in the eggs and vanilla and mix throughly. Add in all remaining ingredients and mix until a soft dough forms.
Chill for 20-30 minutes in the fridge. Mix in a separate bowl your topping.
Take chilled dough and scoop 1 - 1 1/2 tsp balls of dough and roll in your hands until round. Roll ball in topping, coat completely. Place on baking tray, lightly press down the top, and sprinkle more of the cinnamon sugar topping on top.
Bake for 10-12 minutes and let cool on the tray for 15 minutes before transferring to a wire rack to cool completely.
