Pepita Pecan Maple Granola


1 1/2 c oats

1 tsp cinnamon

1/4 tsp nutmeg

1/2 tsp salt

1/3 c raw pepitas

1/3 c raw pecans chopped

1/4 cup dried apricots, diced

2 tbs coconut oil

1/3 c maple syrup

1/2 tsp vanilla

2 tbs chia

1 tbs flax

*optional 2 tbsp peanut butter or nut butter of choice


Preheat oven to 325 degrees and line a baking sheet with parchment.


In a large mixing bowl add all dry ingredients and stir to mix. Add remaining ingredients, and use hands to thoroughly combine. If there is some clumping it's okay. Do try to make sure all dry ingredients are coated/wet.


Spread granola on parchment covered baking sheet so using hands pack densely. It should be flat and even. Bake for 20-24 minutes, until edges are lightly browned.


Let cool completely. Once cooled, break apart. Enjoy!
