Peanut Butter Thins

2 c peanut butter (I used Justins)

2 c granulated sugar

2 eggs

2 tsp baking soda

1 pinch salt

1 tsp vanilla extract


Preheat oven to 350 degrees F. Line a baking sheet with parchment and set aside.


In the bowl of a stand mixer, combine the peanut butter and the sugar until thoroughly mixed. Add in the eggs and mix completely. Add in all remaining ingredients and thoroughly combine.


Roll into 1" balls and place on the prepared baking sheet at least 2" apart. I had 5 cookies on each tray.


Bake for 8-12 minutes, until edges are slightly brown. Cookies can burn so keep checking. Let cool on the baking sheet for an additional 5 minutes before transferring to rack to cool completely. They should become less puffy and more flat as they cool.
