1 large loaf good-quality dairy free French loaf, sourdough, ciabatta, or challah (I bought a 16 ounce loaf and prob used between 10-12oz)
4 large eggs
1 cup non dairy milk - I used soy
2.5 tbs vanilla
I sprinkled ground cinnamon to taste - prob 2 tsp give or take
1/4 teaspoon salt
1/2 c dairy free butter
1 c brown sugar + 1 tbs
Grease 9x12 baking pan well.
Stir all brown sugar except the 1 tbs and dairy butter together in a saucepan over medium-low heat until butter melts and sugar dissolves into butter, 2 to 4 minutes. It should start to caramelize. Pour into prepared baking dish and spread a 1 1/2- to 2-inch layer of bread pieces over the top.
Beat milk, eggs, and vanilla extract together in a bowl; pour milk mixture over bread into the baking dish and move bread as necessary to ensure all bread is absorbing liquid. Sprinkle cinnamon over the top. Cover the dish with plastic wrap and refrigerate, 8 hours to overnight.
Preheat oven to 450 degrees. Remove plastic wrap from baking dish and sprinkle remaining brown sugar over the top of the bread mixture. You might need slightly more brown sugar if it’s not enough.
Bake at 450 for 10 minutes then turn down the heart to 350 and bake for 30 additional minutes. Juices should be bubbling but middle should be baked and not soggy. If it's too wet, bake additional few minutes until desired firmness.
Let cool for 10 minutes before cutting.
