Orange Vanilla Muffins


1/2 c orange juice

1/2 c dairy free milk

1/2 c dairy free butter

1 c granulated sugar

1 tbs vanilla extract

1 tbs baking powder

3/4 tsp salt

3 c ap flour

1 tbs orange zest

2 eggs


Turbando sugar for topping


Preheat your oven to 400° F and prepare a muffin tin with liners. Set aside.


Team in the bowl of a stand mixer dairy free butter and granulated sugar until light and fluffy. Add in the eggs and mix until smooth. Add all remaining ingredients and mix on low until a light and sticky dough forms.


Fill liners in prepared pan about 3/4 - 7/8 full. Sprinkle a healthy amount of turbanado sugar over the tops. Bake for around 17 minutes, until a toothpick inserted comes out clean.


Enjoy right away or let cool.
