1 ½ c granulated sugar
1 c dairy free butter
2 eggs
2 teaspoons vanilla extract
2 cups ap flour ⅔ cup cocoa powder
¾ teaspoon baking soda
¼ teaspoon salt
2 cups dairy free chocolate chips
Preheat the oven to 350°. Line a baking sheet with parchment and set aside.
Cream the dairy free butter and sugar in the bowl of a stand mixer until light and fluffy. Add the eggs and vanilla and combine throughly. Add cocoa powder, vanilla, baking soda, and salt and mix on medium. Fold in the flour slowly. Do not over mix.
Once dough forms, fold in dairy free chocolate chips by hand.
Scoop tablespoon sized balls onto baking sheet, leaving approximately 2” between cookies.
Bake for 8-10 min. Let rest of the sheet for another 5 after taking cookies out of the oven. Transfer to a cooling rack to cool
completely.
