Oatmeal Chocolate Chip Cookies



1 c dairy free butter

1 c light brown sugar firmly packed

½ c granulated sugar

2 eggs

1 ½ tsp vanilla extract

1 3/4 c ap flour

2 tsp cornstarch

1 tsp baking soda

3/4 tsp salt

3/4 tsp ground cinnamon

3 cups old-fashioned rolled oats

8oz chocolate chips


In the bowl of a stand mixer cream dairy free butter and sugars together until light and fluffy. Slowly incorporate eggs and vanilla until thoroughly combined.


Add in remaining ingredients saving the chocolate chips for last. Combine all on slow working your way towards medium speed. Once totally combined add in chocolate chips.


Chill dough for at least 30 min up to overnight.


Preheat oven to 375° F and line a baking sheet with parchment.


Scoop out 2” Size balls and put on the prepared baking sheet approximately 2” apart. Bake for 10-12 min until tops and edges are just starting to brown.


Leave on the tray for at least 10 minutes to cool. Transfer to a cooling rack to cool completely.
