3 eggs
salt and pepper to taste
Garlic powder to taste
Onion powder to taste
Vegetable oil - 40oz
1 c cornstarch
1 c ap flour
Marinate chicken parts in 3 eggs and spices for 3 hours to overnight in fridge.
Pour oil into large deep pot. Heat oil on med high until slightly steaming and you see ripples in the oil. Turn down the heat to right below medium.
Mix flour and cornstarch together thoroughly with a whisk in a large bowl. Place chicken parts in this mixture and coat thoroughly. Make sure to get in all folds.
Take chicken and place in oil, flipping over constantly every minute or two. Chicken is done when skin is a medium to dark golden brown color on both sides.
Set on paper towels to drain.
