1/3c to 1/2 c olive oil
1/4c - 1/2 c reserved pasta water
1/2 medium onion, diced
4 cloves of garlic, sliced super thin
basil (to taste)
Black Pepper (to taste)
Table Salt (to taste)
Maldon Salt (to taste)
Juice of 1/2 a lemon
Zest of 1/2 a lemon
1 lb fettucini
Heavily salt a pot of water and set to boil. Add pasta and cook following instructions.
Sauté over medium heat onion and garlic in olive oil until the onions are clear and the garlic is fragrant. Add table salt, pepper, and lemon juice and keep on heat for another few minutes keeping a close eye so the garlic doesn't brown.
Drain pasta saving up to 1/2 c pasta water, and add it to the olive oil mixture. Toss to combine until all pasta is coated. Remove from heat and plate.
Top with pinches of zest, more basil, pepper, and maldon salt. Eat right away, or delicious served cold.
