8 tbsp dairy free butter
2 eggs
2 3/4 - 3 cups ap flour
1 tsp baking soda
½ tsp salt
4 tsp lime zest plus more to roll cookies in
1½ tsp vanila extract
2 tbsp lime juice
Preheat oven to 350° F and line a baking sheet with parchment paper.
In the bowl of a stand mixer cream the dairy free butter and sugar together until light and fluffy. Add both eggs and mix on medium until combined.
Add all remaining ingredients and mix on low-medium until throughly combined. If dough is too soft add more flour one tbs at a time. Scrape down sides and place in the refrigerator to chill for 30 minutes.
On prepared pan, roll dough into 1 tbs sized balls. Roll ball in extra granulated sugar and extra lime zest mix. Place on baking sheet 2" apart. Bake for 11-12 minutes. Remove from oven and leave on try for 5 min before moving to a cooling rack. Enjoy!!!
