Healthy Chunky Pecan Granola


*adapted from Alice Pages recipe:


1 1/2 c old fashioned oatmeal

3/4 c roasted and salted pecan halves

1/2 c unsweetened coconut flakes

1 tbs almond flour

1 tsp ground cinnamon

1/2 tsp ground ginger

1 pinch ground nutmeg

2 tsp vanilla extract

1/8 c raw pepitas

2 tbs chia seeds

1/4 c honey (can use maple syrup for a vegan version)

1 tbs melted coconut oil

1/8 c dairy free chocolate chips (can omit if you want)


Preheat the oven to 300 degrees f and line a baking sheet with parchment.


Add all dry ingredients to a large bowl and stir together. Add wet ingredients and fold over until all ingredients are mixed together. If some remain dry, they won't stick to make those delicious chunks so thoroughly combine! Everything must be coated.


Pour onto prepared baking sheet. Using a spatula or your hands, press down on the mixture to form an even, tightly packed layer in the center of the baking sheet.


Bake for 12-14 minutes until starting to turn golden brown. Remove from oven and rotate. Do not stir as that breaks up the clumps! Put back in the oven for another 12-14 minutes. Watch carefully as granola can easily burn.


Remove from oven and let cool completely on the baking sheet - at least 45 minutes. Break with hands into clusters and enjoy!
