Dairy Free Italian Melting Tea Cookies


2 c ap flour

1/2 tsp baking powder

1/4 tsp salt

1 c dairy free butter

3/4 cup sugar

2 eggs

2 tsp almond extract

powered sugar for dusting


Preheat oven to 375° F and line a baking sheet with parchment.


In the bowl of a stand mixer cream together dairy free butter and sugar and mix u til light and fluffy. Add in eggs and mix u til throughly combined. Add in all remaining ingredients until a soft dough forms. If it’s too sticky, add up to 1/4 more flour.


Chill for 20 minutes.


Scoop out and roll into 1” size balls. Flatten slightly the tops. Place on prepared baking sheet approximately 2” apart. Bake for 10 minutes where edges should just be getting slightly brown. Leave on the baking pan for 10 min to cool before transferring to a cooling rack.


Once completely cool sprinkle with the powdered sugar and enjoy immediately!
