1 cup + 2 - 4 heaping tbs of flour
2 tbs olive oil + more for brushing
1/3 c water
1 tsp table salt
kosher salt for sprinkling
Preheat oven to 400° F and line a baking sheet with parchment. Set aside.
In the bowl of a stand mixer, combine all ingredients reserving the extra flour. The dough should be manageable. If it’s dry add a bit more water. If it’s sticky (as mine was) add more flour one tbs at a time until it’s not sticky to the touch.
On a floured counter, roll out until 1/8” thick. Gently transfer to the prepared sheet. Using a fluted cutter, cut crackers to desired size. Separate squares with at least 1/4” of space between crackers. I did mine in two batches.
Brush lightly with additional olive oil. Sprinkle with sea salt and any other seasonings of your choice. Bake for approximately 12-15 minutes. Don’t let crackers burn!
Let cool on the pan for a few minutes then enjoy!
