Copycat Tates Chocolate Chip Cookies


2½ cups ap flour

½ teaspoon baking soda

1 teaspoon salt

2½ sticks dairy free butter

1 cup granulated sugar

¾ cup (packed) light brown sugar

2 large eggs

2 teaspoons pure vanilla extract

2 cups (10 oz) dairy free chocolate chips


Preheat oven to 350° and line a baking sheet with parchment. Set aside.

In the bowl of a stand mixer cream together the butter and all sugars until light and fluffy. Add the vanilla, salt, baking soda, and combine throughly. Add eggs and beat in. Slowly layer in flour a bit at a time until dough thickens. Once all flour is combined, add in chocolate chips until just mixed in.

There is no need to chill this dough! Scoop about 1” round drops into parchment, placing at least two inches apart. I had 5 cookies on a sheet. Bake for 14 minutes and then let cool on the pan for 2-5 minutes before transferring to a cooling rack.
