Coconut Oatmeal Cookies


1 c shortening

1 c granulated sugar

1 c light brown sugar, packed

2 eggs

2 tsps vanilla extract

2 c ap flour

1 tsp baking powder

1 tsp baking soda

1/4 tsp salt

1 c old fashioned oats

1 cut unsweetened coconut flakes


In the bowl of a stand mixer, combined shortening and sugars. Mix until fully incorporated. Might look a bit like sand. Add in eggs and vanilla and mix until combined. Gradually add in all remaining ingredients and mix on medium until fully incorporated.


Dough will be very soft. Scoop it out and place in on saran wrap. Form into a log and wrap tightly. Place in fridge for 30 minutes. After 30 min, take out and place in freezer for 30 minutes.


Preheat the oven to 350 degrees F, and line a baking tray with parchment. Set aside.


Remove from freezer and remove saran wrap. Slice on a cutting board with a knife about 1/4" - 1/2" thick. Place slices on prepared baking sheet about 2" apart, and smooth edges of raw cookies slightly so they aren't jagged.


Bake for 10-13 minutes, until edges have started to lightly brown. Remove from oven and let cool on the pan for a full 5 minutes before placing on a wire rack to cool completely.
