Chocolate (Molasses) Chocolate Chip Cookies

8 tbs dairy free butter

1/2 tbs molasses

1/2 tsp salt

1 1/8 c ap flour

1/2 tsp baking soda

1/2 cup granulated sugar

2/3 cup light brown sugar, packed

1 large egg

1/2 tbs vanilla

1/4 c dairy free cocoa powder (I use Chatfield's brand)

5oz of dairy free chocolate chips


Preheat the oven to 375 degrees F and line a baking sheet with parchment. Set aside.


In the bowl of a stand mixer, cream the dairy free butter and sugars together until light and fluffy. Add the egg and the vanilla and mix until combined.


Mix in all remaining ingredients except flour and dairy free chocolate chips. Slowly add the flour mixing just until it's blended in. Slowly add the chocolate chips.


Chill the dough for about 30 minutes.


Scoop out 1 1/2" worth of dough and roll in your hands to get a round ball. Place on the baking sheet at least 2" apart. Bake for 10-13 minutes. Let rest on the baking sheet for 3-5 minutes then transfer to a wire rack to cool completely.
