1/2 cup dairy free butter
3/4 cups white sugar
1 egg
1 tsp vanilla extract
1 cup all purpose flour
1/3 cup cocoa powder
1/2 tsp baking soda
1/4 tsp salt
1 cup dairy free chocolate chips
Preheat oven to 350° F and line a baking sheet with parchment paper. Set this aside.
Cream together in the bowl of a stand mixer the dairy free butter, and sugar until blended. Add in the vanilla and egg and mix and on medium until thoroughly combined.
Add in all remaining ingredients except chocolate chips, and mix on medium until a soft dough comes together. Slowly add in dairy free chocolate chips, and food in by hand with a spatula until evenly distributed.
Drop onto prepared baking sheet in 1”
round balls, spaced 2” apart. Bake for 8-10 minutes until cookies are slightly darker on the edges and bottoms and completely puffed up on the top.
Let cool on the pan for about 5 minutes then transfer to a cooling rack to finish cooking completely.
