1 and 3/4 c ap flour
1/4 c cocoa powder
1 tsp baking powder
1/2 tsp baking soda
2 tsp cornstarch
1/2 tsp salt
1/2 c dairy free butter
1/2 c granulated sugar
1/4 c brown sugar
2 eggs
3 tbs coffee only ground
1-2 tbs hot water
10oz chocolate chips
1 1/2 tsp vanilla extract
In the bowl of a stand mixer, cream, dairy free, butter, and sugars together into light and fluffy. add in both eggs, vanilla, salt, baking powder, cornstarch, and baking soda, one tbs of coffee grounds, mixing until well combined.
In a separate container mix two tbs of coffee with 1-2 tbs of hot water. Slowly spoon into bowl to combine with other ingredients mixing until combined.
Slowly add in all other remaining ingredients except chocolate chips, scraping the sides as you mix on medium- low.
Once soft dough is formed, add in chocolate chips. Please dough and refrigerator to chill for 30 minutes to 1 hour.
Preheat oven to 350° F and line a baking sheet with parchment.
Scoop out 1 1/2" size balls and place at least 2"
apart on the prepared baking sheet. Press down slightly to flatten tops. Bake for 10-12 minutes. Let sit on the tray for 15 minutes before transferring to a cooling rack.
