2-3 medium over ripe bananas (approx 1 1/4 - 1 1/2 c mashed)
1/3 c dairy free butter, melted
1 tsp baking soda
1 pinch of salt
1/4 c light brown sugar
1/2 c granulated sugar
1 egg
1 tsp vanilla extract
1 1/2 c ap flour
5 oz of dairy free chocolate chips
2 tbs chia seeds
Preheat the oven to 350 degrees F. Grease a 4x8" loaf pan.
In a large mixing bowl, mash the bananas with a fork until completely smooth. Stir in the melted butter.
Add the baking soda, sugars, and salt. Once combined add the vanilla extract and the egg. Mix completely. Next mix in the flour until just combined. Do not over mix. This will result in a denser bread.
Add the chocolate chips and chia. Stir until evenly distributed amongst batter.
Pour the batter into the prepared loaf pan. Bake for 50 minutes - 1 hour until a toothpick inserted comes out clean.
Take out of the oven and let cool in the pan for 10 minutes. Remove from loaf pan and let cool completely. Slice and serve. (Pro Tip: a bread knife will make your slices less crumbly than a serrated knife)
