Breakfast Cookies




2 large eggs

1 - 1 1/2cup oat flour, made from 1 3/4 -2 cups whole rolled oats

1 1/4 cups additional old fashioned oats

1/2 cup almond flour

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon cinnamon

1/2 teaspoon sea salt

1/2 cup creamy natural peanut butter

1/4 cup coconut oil, melted

1/2 cup maple syrup

3/4 cup dairy free chocolate chips


Preheat oven to 350 and line baking sheets with parchment.

Combine all ingredients into one bowl. Mix together by hand until completely combined. If too wet, add extra oat flour and extra old fashioned oats.


Using a tablespoon, scoop large scoops onto parchment - approx 2 tablespoons worth. Keep scoops about 2” apart. Bake for 20-22 minutes until edges are starting to brown. Leave on tray until cool - about 10-15 minutes.
