1/2 c coconut oil
1/2 c honey
1/3 c light brown sugar
2 tbs vanilla extract
1/2 tsp salt
4 c old fashioned rolled oats
6oz dairy free chocolate chips/chocolate chunks
6 oz dairy free white chocolate chips
1/8 c halfed cashews
2 tbs pepitas
1/8 c unsweetened coconut flakes
Preheat oven to 325 degrees.
Line a (11x17 inch) baking sheet with parchment paper
Add the oil, honey, brown sugar, vanilla, and salt to a large bowl.
Whisk until sugar is dissolved and oil is well incorporated. It should look a bit like caramel.
Add the oats and the rest of the mix-ins and stir well.
Pour the oat mixture onto the baking sheet and spread it into an even layer. Firmly pack it down with your hands.
Bake for 30 minutes, rotating the tray half way through cooking.
Let the granola sit at room temperature for one hour.
Use your hands to break granola into large chunks.
Store at room temperature in airtight container.
