3 cups ap flour
1 1/2 tsp baking powder
1 tsp table salt
3 sticks dairy free butter
1 1/2 cups granulated sugar plus extra for rolling
2 eggs
Preheat oven to 350° and line a baking sheet with parchment paper. Set aside.
Cream the butter and sugar in the bowl of a stand mixer until light and fluffy. Add in all other ingredients and mix until throughly combined. On a slower speed gently add in the flour 1/2 a cup at a time. Do not over mix. Dough will seem a bit sticky. This is okay!!
Scoop out 1” size balls and roll the extra sugar to coat. Place on the baking sheet and press down slightly. Bake for 11 minutes and then let cool for 2-5 min on the tray before transferring to a cooking rack.
