Preheat oven to 375. Line baking sheets with parchment paper.
2 1/4 c + 1 tbs ap flour
1 tsp baking soda
1 tsp salt
7/8c dairy free butter - I use Earth Balance Soy Free "Buttery" sticks
3/4c granulated sugar
3/4c packed light brown sugar
1 1/2tsp vanilla extract
2 large eggs
1 bag (approx 12oz) of dairy free chocolate chips (I use enjoy life or no whey)
Cream butter and sugar together in a stand mixer until light and fluffy. Add in eggs and continue to beat. Once well incorporated, and salt, baking soda and vanilla. Then add the flour. Lastly, add the chocolate chips.
Chill the dough for 20 minutes to 1 hour.
Scoop tablespoon size balls onto prepared sheet, placing about 2" apart. Bake for 9-11 minutes until edges are starting to brown. Cool on sheet for 2 minutes, and then transfer to wire rack until cooled.
