2 c ap flour
1 tsp baking soda
1/4 tsp salt
1/2 c dairy free butter
3/4 c brown sugar
2 eggs, beaten
2 medium sized bananas - ripe
(optional - dairy free chocolate chips)
Preheat oven to 350 degrees. If using loaf pan, grease.
Cream together in stand mixer dairy free butter and brown sugar. Stir in beaten eggs and bananas until all are blended together. Stir in remaining ingredients and combine until lump free and blended. Do not over mix or it will result in a denser bread. Add chocolate chips if desired.
If making a loaf bake for approximately 55-65 minutes until toothpick inserted comes out clean. Let cool in pan for 15 minutes then transfer to a wire rack.
