Apple Pie Muffins


2 c ap flour

1 cup granulated sugar

2 tsp baking powder

3/4 tsp salt

1 tsp cinnamon

1/2 tsp nutmeg

1/4 tsp cloves

1/3 tsp ground ginger

2 eggs

2 1/4 tbs vegetable or canola oil

1/2 cup apple cider

1/4 cup dairy free milk

1 tsp vanilla

Turbinado sugar for topping - approx 12 tbs


Preheat the oven to 350°. Prepare a muffin pan with liners.


In the bowl of a stand mixer, mix all the wet ingredients on medium until combined. Slowly add in all the dry ingredients while mixing.


Fill each well 3/4 of the way full. Top with 1 tbs of turbinado sugar. Bake for 20-25 minutes until muffins have risen and a toothpick inserted comes out clean.


Let cool in the tin for 5 minutes then transfer to a rack for cooling completely. Enjoy!!!
