For the pastry:
2.5 cups of flour
1 teaspoon salt
2 teaspoons granulated sugar
1 cup of shortening
6-8 tablespoons of ice water
1 egg
turbinato sugar to taste
For filling:
4 different types of apples to your taste
1 tbs lemon juice
1/2 tsp cinnamon
1 tbs granulated sugar
1 tsp ap flour
For pastry:
Combine all ingredients in food processor on pulse except water. Slowly while mixing add in water 1 tbs at a time. Dough might look a bit crumbly but will be together. Don’t over add water or crust won’t be flaky. When you squeeze dough it should stick together easily.
Pat it with a little flour and wrap in a disc in Saran Wrap and place in the fridge for at least 2 hours preferably overnight.
When ready to use, flour board/countertop and rolling pin and roll to desired thickness (I did about 1/4") and cut to desired shape. For filling:
Dice apples and combine in bowl with all other ingredients. Toss to make sure completely covered.
Pre-heat your oven to 350. Line a baking sheet with parchment paper.
Place heaping tablespoons of filling inside your dough. Pinch dough closed over the filling and use a fork to flute the edges. Make sure you cut holes to release steam. Brush with egg wash and sprinkle w turbinato sugar. Place on a sheet lined w parchment paper
Bake at 350 until golden - start checking at 15-18 min but could take much longer depending on the size and amount of filling.
