5 Ingredient Peanut Butter Cookies



1 egg

1 cup light briwn sugar, packed

1 cup peanut butter

1 tsp baking soda

1/2 cup dairy free chocolate chips

(optional, 1 tsp vanilla)


Combine all ingredients in the bowl of a stand mixer. Mix on medium until throughly combined.

Line a baking sheet with parchment and preheat the oven to 350° F.

Drop cookies in 1-2” balls on prepared sheet. Make sure they are spaced 2” apart.

Bake for 8-11 minutes until slightly browned at edges. Let sit on the tray for 5 minutes then transfer to cooling rack to cool completely.
